Quinoa fried rice

2 cups quinoa, cooked
2 tbsp chopped marinated artichoke
1 tbsp sundried tomatoes
4 sprigs finely chopped mint
1/2 cup peas and chopped carrot
1 tbsp oil
salt and black pepper, to taste
Heat up a pan and add oil. To the oil, add all the above ingredients, except cooked quinoa. Once the vegetables cook through, add the quinoa. Mix in salt and pepper for taste and enjoy.
