Fresh and Fried Veggie Sandwich

ciabatta bread
tomato slices
cucumber slices
lettuce
marinated jalapeno(non-sathvik, optional)
avacado slices / guacamole
butter
cheese slices (optional)
chioce of other layers : Kimchi, sauerkraut, breaded eggplant, fried plantain, spiced fried tofu
Fried Tofu
Ingredients: Firm tofu, salt and spices, to taste.
Put weight on a firm tofu block for 1/2 hr and drain the water. Cut big flat pieces of tofu and shallow fry it in a pan with oil. Add salt, chilli powder or other spices of your choice. Fry on each side until crisp.
Fried Plantain
Cut plantain into thin slices and shallow fry on pan till cooked. Add salt and chilli powder to taste.
Breaded Eggplant
Ingredients: Eggplant, buttermilk, flour, bread crumbs, salt, to taste.
Mix wheat flour or all-purpose flour and salt in some water to runny consistency. Slice Eggplant into 1/4 inch slices and dab them in buttermilk. Then, coat them with the flour mixture and press them on bread crumbs. Shallow fry them on both sides till cooked.
Note: Vegan buttermilk can be made by adding apple cider vinegar to your choice of non-dairy milk
