Pani Puri

20 golgappa or small puri
2 potatoes, cooked and chopped
1 cup black chana
1/2 cup date and tamarind sauce
1 cup sev
1-2 tbsp pani puri masala
few sprigs of mint, minced
few sprigs of coriander leaves, minced
1/2 tsp cumin(jeera)
1/2 tsp grated ginger
1/8 tsp honey/sugar
lemon juice, to taste
chat masala, to taste
salt, to taste

In 5 cups of water, add pani puri masala, minced mint and coriander leaves, crushed cumin seeds, grated ginger, honey and lemon juice and salt to taste. This is the pani.
Prepare the other ingredients that are put in the puri. Pressure cook the potatoes, then peel and chop them and add sufficient chat masala for taste and keep aside. Soak overnight the black indian chana and then pressure cook with salt. Drain and keep aside. Put some sev and date-tamarind sauce in different containers.
To make the Pani Puri, make a hole in the puri(puffed bread), put all the individual ingredients in the puri, fill the puri with pani and enjoy immediately!
